What’s the best way to animate turrets? Should I make them seperate objects, use armatures, or something else?

They don’t have to be separate Objects, just separate Mesh Parts. Give the turret a Vertex Group separate from the body, and possibly from the barrel(s), hatch etc, if they are going to be animated, then Parent each to a Bone of the same Armature.
