I don’t see any faces,i’m not sure if you just disabled viewing for them or if you just created giant faces.

Each face needs 4 vertices’s for optimal topology.

It looks like your entire model is a single, huge polygon. Split it all into quads (squares), and change the shading mode to smoothed faces. After that, put on a subsurface subdivision modifier and see how that comes out.
