What would be the drawbacks of blender on an i7 NUC?

Obviously certain aspects of rendering could be quite slow compared to gpu rendering, but for general use and compared to the desktop cpu benchmarks.

I guess it would be similar to rendering on a laptop. It would be hot and noisy, and you’d probably get better value and upgrade flexibility building your own desktop system.

Generally speaking, you don’t get a better deal buying a more compact computer system. I’m not suggesting bigger is better, or that it wouldn’t do the job, just that smaller/more portable tends to be less powerful or more expensive.

Here is a review:-

Well, I do have a desktop system, but this was more for portability and I don’t really like laptops. It’s still needs thinking about especially vis-a-vis a monitor solution.
