Where can I change the location to save a new file?

Blender throws them into the root folder.

I went to file path but I can only see temporary files, fonts, textures, scripts

No settings for the regular files. Where can I find them? I would like to put blender projects into their own folder.

When you save a specific file for the first time a popup window should appear with Blenders file browser. It’s location is the last location you accessed with this window.
Use the file browser to navigate to the folder where you want to save the file. Then hit the save blender file button at the bottom.
