THE guy in the video takes out the grid like nothing, but I cant find it…

IN edit mode, press ‘A’ to select all of your faces - this will show all of the faces on the UV Editor (they are orange on the video because he has them selected in the UV Editor - if they aren’t orange then you need to press ‘A’ with the cursor in the UV Editor window to select all of the faces there too.
Whether they appear as a grid or not will depend on how you have unwrapped the faces in the first place (I haven’t watched the video so don’t know what he’s done). Hope that helps? Good luck.
