I have model going and now I need to make parts of the model white. When I do, and yes I know how to assign a material to a polygon, the render shows up as grey. What can I do about this?

You can set a higher emit value for the white material.
You can lighten your scene better.
You can set the material shadeless
You change the default lambert diffuse to intensity 1.0
You can change the default CookTorr specularity to intensity 1.0
You can change the worlds ambient color to white
You can change the materials ambient amount received.
Material and Lighting goes hand in hand.
You just have to get a setup going delivering believable results =)
Go with Toon? Note that this is white as it gets. Anything whiter will be blown out, washed out, over exposed, sun glair white without detail! If you want that, set Emit to 1. That will bow it out! White still need to be little gray. Also look what I did here; put the white against gray or black.
