It’s an old problem of the curve bevel tool—there’s no “even thickness”, or “miter joints” option. It was officially being addressed, though the development has paused for now.
There are a couple of Geometry Nodes-based solutions that can deal with most scenarios, however. Here’s one from BA, here’s one from StackExchange.
