Window Insets on Building Models

Okay, I’m trying to model some realistic castles, and I’m having a bit of a problem. Most buildings have inset windows and doors, etc. I’m not exactly sure how to create those insets in blender. Any suggestions would be great.

Add a plane as a window or a door, scale it to size, extrude along the axis that gives it thickness and stick it in the window or door.
Or, select the verts on the inside of the hole Extrude (without moving the mouse) scale with MMB to the center of the wall, LMb to place, grab to position. Then you have to create faces. Select 2 verts at a time to make edges (F), then select 4 verts at a time to make faces (F).
That’s not the best way to do it but it’s the easiest to explain.
