When I right-click on a selected edge in edit mode, I’d like to have (select) edge loop and edge ring as additional options in the menu.
How is this done?

It can’t be done in the base UI. The most you can do is assign hotkeys to those operations or put them into the Quick Favorites menu (both of which are available if you right-click the relevant function in the Select menu).
The only way to make custom menus is via scripting or add-ons. At least, for now. IIRC there has been some talk about making customizable menus in the future.
