So here the X axis should be -347 instead of -12.5. It also doesn’t change to orange but stayes yellow even tho I inserted the keyframe. The Z axis is also wrong. If I do anything it pops to the wrong value and changes to yellow.
I can ctrl-z and go back to the previous state. If I wasn’t clear I can make a video demonstrating the problem.
I’m using Blender 4.2.1. I have tested it in 4.0.2 and this is not an issue.
https://youtu.be/vuknId7d1Q8 here is a video demonstrating the issue. So here I add a keyframe for the rotation that I want to be 386 in the X case but it puts it to 26. This causes problems for the interpolation becouse it twists to that position.
It might have to do something with my rig becouse I haven’t encountered this anywhere else.
Yellow means keyframed on current frame. Orange means animated but not keyframed on current frame. You probably don’t have autokey on, or your keying preferences should be changed

My bad I just watched your capture. I thought you meant “i”" from the viewport, not “i” over properties. So, hum, your keyframes and your transform properties are out of sync it seems. Can you reproduce this in a fresh file? like, with a cube? or a simple armature
If I copy the same armature to a different file it does the same thing. I havent got the same issue with other objects.
Also you can use ‘I’ for keyframing it just doesn’t show the menu
