RJ2005 Take a new project blender default scene will be fine. Take the cube and move it to the side a few units. now deselect everything and add another cube. Tab to object mode select both cubes and press the “move object centers only” and then hit R for rotate. Both cubes will rotate around a center point between them. hope that helps.
I trie that with 3 objects
cube - spere - cylinder
tried to rotate with and whitout that icon on or off

When you select multiple objects and rotate them,
with Move Object Centers button OFF, each object will revolve around the pivot point, and rotate about its own center (like the Moon always showing the same face to the Earth, or the horses on a carousel).
with the button ON, the object centers revolve around the pivot point, but each object does not rotate about its own center. Each object moves but maintains its original orientation with respect to the rest of the world (like the benches in a standard Ferris wheel ride).

I had put a cube - sphere - cylinder
i could not see the difference with the spere in the middle - pure luck
The small video made me see the meaning of it
now i begin to understand - i’ll play with this feature to better understand it
i never saw anything in the book about this !

Not easy to describe in words
Here is my summary
When you select more than one object in object mode
Blender calculate a new center of gravity for all the objects
and this affect the behavior of scale and rotate
reset - Icon - “move center only”
Scale --> scale all the objects and the distances between objects
Rotate --> Rotate all the objects around their own center and around the center of gravity of all the objects
Set Icon
Scale --> Scale only the distance between objects
Rotate --> Rotate all the objects around the center of gravity of all the objects
