complex uv unwrap

I have a complex rock with perhaps 1000+ vertices lots of overhangs and crevices wht is the best way to unwrap so that I might bake a texture image onto it?

That information alone is not enough for anyone in here to be able to help you. Perhaps if you can post an image than we can have a better idea of how that rock looks like.

Well, simplify the mesh. Normally with the organic forms, one creates low poly and high poly model. All the UV stuff is done at low poly model. High poly model used to create height map information. So the “looks” of high poly model is preserved.
