The main idea is a bunch of butterflies covering an object and then uncover it but I’m stuck there

ı can suggest an technique, delete adges and faces only at ico saphire, seperate all vertices, each will be seperated object, then make their pivot at zero, transfor them random rotation, key them, add hair particle to vertices objects, set render object as butterfly, if your mesh is complex; add shrink warp to vertices objects to follow surface, like my example. There is some problems like the butterflies not towarding to their way, intersect with other butterflies, you can edit them manually. hope it helps or make you find a new solution.
if it is all about that butterflies leaving the object, you can use randomize transform, delete only faces and edges, seperete them with p( by loose parts), at object mode set origin to geometry, scale 5 then change transform pivot point individual, scale to 0.2, randomize transform.
