I don’t really know how this happened, i got a few tests sims that seemed to work and then? without (to my knowledge) changing anything but simulating at a higher resolution (240), I’m getting this kind of results
What’s more the mesh is insanely complex and heavy… Any idea ?

Are you using the Beta version of Blender 2.8? This looks like a bug that was caused by a change in Blender 2.8 during the beta. I would suggest using the latest version of the addon and the official release of Blender 2.80 or 2.81 that fixes some bugs that can affect the FLIP Fluids addon: https://www.blender.org/download/releases/2-80/
If you are using the latest version of Blender/FLIPFluids, this may be caused by a non-manifold mesh: https://github.com/rlguy/Blender-FLIP-Fluids/wiki/Manifold-Meshes
If you are able to attach the .blend file, I would be glad to check for any problems!
