Just curious, if I start a render that is going to take a while and I realize that I wanted to change something is there a way to stop the rendering without closing blender?

… unless you’re using YAFray of course … then the only way you can stop it is by shooting your comp in the HDD 
Rendering in Yafray can be stopped too with ESC, when you have switched the ‘xml’ button off (in the ‘Yafrey’ tab).

Well, actually, as far as yafray is concerned, that is one of the problems which is causing a bit of delay for the new release. The new yafray has some diffculty accepting the escape key, Blender doesn’t respond, for some reason the key press event get lost in another dimension or something.
And for xml export, you can always use ctrl-c in the console btw.
Other than that, kargath64 solution could work, I have heard though that for some reason some people actually use that option who are just trying to use yafray…
