Is it possible to select multiple models and select “image texture” for all of them at once? Or making Image texture by default for all my models ? (So I don’t have to click and choose “image texture” for every model)

You can apply any property to all selected by Alt Clicking it
You can also use copy to selected, just select all the objects that you want to have the material and select the one with the material last.
