Keep Offset bones connected at the wrong points

I’ve been teaching myself Blender for a bit now and all of the sudden when trying to redo the armature for an older project, trying to parent offset bones makes them connect at the same point instead of different ends


I’m beyond confused on what’s happening

It looks like you have parented both bones at once.

If you want something like this

Parent them separately, B2 to B1 (with offset), then B3 to B2 (with offset)

Which is the same result as making the bones like this

and then deleting the connecting bones (one by one)
