I am new to Blender and am getting the hang of it slowly.
I have created a high poly model and would like to create a low poly version.
What would be the best way of doing this? Is there a way I can see the high poly sculpted version so I can keep the rough proportions the same when creating the low poly model? Did I make them in the wrong order?

Yes you did make them in the wrong order, but its not the end of the world! To solve the problem, you can manually retopologise the mesh. Basically this means that you model a low poly version of the object directly over the sculpted model.
The best thing to do next time is this:
Model low poly form of objectwith reasonable detail within your poly limit.
Duplicate the object, add multires to the copy and sculpt details.
Bake the sculpted normals to the low poly mesh.
I could explain how to do the last bit in detail but its half midnight and I should sleep. Just google for something like ‘blender bake sculpt normals to low poly’. There are plenty of tutorials out there.
