Is the 2.55 Beta good to download on new iMAC, or would I be better advised to start with another version? I have some experience with 2.49b on PC (albeit not a lot)!

2.55 will work fine on the iMac. Look to blendercookie.com for a getting sterted guide as well as numerous tutorials.
