Just playing with the Ocean modifier and thinking that choppiness is better described as windswept / Windiness?
Choppiness seems more appropriate than your suggestions since choppy is a common term used to describe waves/seas
Windiness doesn’t seem to mean anything specific and windswept I would take as being open to the wind, which all oceans are.
