Problem when rendering Animations

I’m new to rendering in blender, and am quite confused about something:

I have the scene, I can render it as a sequence and play it back in blender, but it renders it to a folder as each individual frame. I want to render it as a single file so I can play it back in quicktime or something. How do I do that?

Select a different filetype in the Display buttons window (F10). Choose either an AVI format or QuickTime (if available).

You mean ‘choose’ by just typing the extention? It doesn’t give an option or anything, and even when I do the above it still renders each frame.
