Reducing polycount while maintaining looks

Hi, i am making a small project for fun. I have some models which are quite high poly and i can see that their geometry can be reduced by dissolving edges and all which will also maintain their quality . But i want to know more on how to retopolize such objects, like how a pro would do it. Any tips or links to ttutorials would be appreciated.

Check BakeMyScan addon and its retopology features.

Normally you just use the highres as a bg mesh and remesh over it one poly at a time if your budget and time allows. It also depends on the type of the final product.

There are some auto topo Blender add-ons that can help with that. They are not substitute for hand work though.
