Rigged 3D digital doubles from 3D scans. Realistic and also low poly/early 80s cgi Style

I’ve got a couple of scans of myself and my bandmate , and have needed to use process them to be able to use them in various music video projects, and always seem to get stuck on some aspect or other, so I thought I’d start a WIP topic here.

Here’s the scan of my bandmate, with just the diffuse texture applied as the base colour:

And here’s my retopo low poly version:

This I’ve modelled half, using snap to position the vertices onto the original scan. Then, I have a mirror modifier (For now), followed by a subsurf, and then a shrink wrap modifier, using the original scan as the target.

My main puzzles are how I go about making all the normal maps etc from the diffuse texture the scanner takes, joining the head onto a body (mb lab for the realistic versions, low poly for the stylised) and lots more that will crop up as I go.
