Would it be possible to rip code from PC games and substitute your models for theirs?
Specifically RTS games and even more specifically Warrior Kings.

yes, but only very popular games [like gta:sa or halo] have communities of people doing that
you ought to be able to use google to see if anybody has for that game.
[and technically you’re messing with the game assets, not the code]

If you do not know much about it you need to start with games that are designed around the idea that a community of moders will develop. Such games often come with tools to help you on the cd.
One older game (RTS) that has such tools available and plenty of community support at least last time I checked (over 6 months to a year ago) Star Craft. There are many others both newer and older then that one. I name it because it is cheap to get started.
