Is there a way to see the texture while you are adjusting the UV’s?
Would like to make sure the UVs are positioned correctly on the texture.
I ask because when I am adjusting the UVs, all I see are the polys/verts selected in the UV editor.

Sorry, I still can’t see my texture.
The texture is set to transparent, does that make a difference?
If the texture is set to transparent then it will disappear, but you should see those wing bits as long as the image with alpha is set up in the material.
You could turn on the overlays again and turn on UV sync, that way only the face you have selected will be highlighted (but if you select them all as in your screenshot then all of them will be highlighted)
Is there a way to turn off the polygon fill and just show the UV verts / poly verts? I ask because I have the entire UV shell selected.
This might help you, in preferences - Themes you can control the alpha value of the shading for face selection and face mode selection.
Here I set Alpha to 0 in the UV editors preferences, that way the faces do not get shaded at all but you can still see the verts and edges. I also set the UV select mode to verts to get rid of the dots in the center of the faces. (Preferences - Themes - Image/UVeditor - face selection - click the colour and set alpha to 0)
You can do the same thing for the 3d viewport if you want. Here I set face selection mode’s colour to be alpha 0 in the viewport.
Take no notice of the colour of my texture (black, white) I inverted the colour in the shader editor.
(Preferences - Themes - 3dViewport - face selection mode - click the colour and set alpha to 0)
Remember you will probably want to set it back to the default again for other projects.
