A long time ago I saw a couple of video tutorials on how to simulate claymation-style animation with Blender. I’ve been unsuccessful in finding these tutorials. Can anyone point me to tutorials/information on this topic ? Thanks.

I don’t know of such a tutorial, but I would think, if you posed each frame individually, you would get that effect. Also you will probably want to use a clay-like bump map on your materials. perhaps one that changed each frame ( animated texture ) to simulate the surface being altered by manual manipulation of the clay object.
It would be better, too, if you changed your default F-Curve interpolator to Constant, to give the animation more of the frame-by-frame look.
